I adore simple, easy quick recipes and they don’t come much more pared back than this!
1 ½ Cups of walnuts
Pinch of salt
½ Cup of medjool dates
½ Cup of dried pears
1 teaspoon of vanilla extract
1/3 Cup raw cacao powder
Put everything together into the bowl of your food processor fitted with an ‘S’ blade and blitz until everything is combined and starting to clump together. You may need to add a couple of drops of water to help it come together if your pears weren’t really moist and sticky.
Scoop the mixture out into a bowl and place in the fridge to firm up a bit for around 30 minutes (longer if you want). When you’re ready to roll them into balls moisten your hands with some cold water to stop them from getting too sticky, then scoop out teaspoon sized lumps and roll into balls. Place into a container and keep in the fridge.
