I spent nearly eight years working for a large confectionery company. It was a wonderful place to work (people always ask me if there were oompaloompas, I’m sorry to say there weren’t) and it gave me both a great appreciation of good chocolate and an ambivalence towards it, which may sound like an oxymoron but trust me when you’re surrounded by something for eight years you only want the good stuff and even then only occasionally! Prior to the recipe of wonder which follows below, my idea of chocolate heaven was Green & Black’s (a beautiful brand I was lucky enough to work on) 85% cocoa dark chocolate. Then a couple of weeks ago I went to a presentation done by Life Foods demonstrating uses for their products and low and behold a homemade raw dark chocolate sample made its way into my unresisting paw. It was pretty wonderful. Needless to say before I left I’d rung a bag of their organic cacao butter and raw cacao powder through the till! I gave the recipe a whirl last night, making a few tweaks of my own, and holy moly, this stuff is now my new chocolate heaven…
150g Cacao butter
8 Tablespoons of raw cacao powder
2 Tablespoons of real 100% maple syrup
1 teaspoon vanilla extract
1 pinch of salt
Gently melt the cacao butter in a bowl over a simmering pot of water.
When it’s melted stir in the remaining ingredients and then whisk until completely smooth.
Decant into your mould of choice and then set for 2 hours in the fridge.
I would keep this is the fridge too.
