Something about these cold, wet weekends cries out for baking and these are a pretty fabulous option to bake if you’re in the mood 🙂
INGREDIENTS
2 ½ Cups of ground almonds
½ Cup of ground linseeds
¼ Cup of coconut flour
Pinch of salt
1 teaspoon of baking soda
2 eggs
1 teaspoon vanilla extract
½ Cup of maple syrup
½ Cup of coconut oil, melted
½ Cup of dark chocolate drops
½ Cup of raw cacao nibs
DIRECTIONS
Pre-heat the oven to 180C.
Line a baking tray with baking paper, so you’re all good to go once your cookie mixture is ready.
In a large bowl combine the ground almonds, linseeds, coconut flour, salt and baking soda and stir to mix. Add in the rest of the ingredients and mix briefly until just combined. Use a spoon to scoop out the mixture onto your prepared tray. Use a wet fork to smooth down the tops. They don’t spread much so you can place them fairly close together. Place the tray in the oven and bake for ~15 mins until lightly browned. They’re fairly soft so handle them gently until they cool down.
These are seriously good, but don’t forget a Paleo treat is still a treat 🙂
