This is the easiest and yummiest banana bread recipe I have come across. I can’t take credit for the original recipe, I copied it out of a magazine, but I have long since forgotten the magazine and the author, but my thanks to you whoever you were. I have tweaked and polished to come up with the below. Hope you all enjoy as much as I do.
2 large, very ripe bananas
3 eggs (average size)
110g almond flour
1 heaped Tablespoon honey
1/4 Cup sultanas
1/4 Cup chopped walnuts
Coconut oil for greasing the loaf tin
Baking paper to line the loaf tin
Pre-heat your oven to 200C.
Grease and line your loaf tin.
Mash your bananas well. Then mix everything together in a large bowl, till combined, but not beaten to death.
Pour mixture into your loaf tin and bake for ~30 minutes. It’s quite moist so it make take a bit longer than this depending on your oven.
