I am not an advocate of comfort eating (I am however an advocate of comfort shopping, preferably online), but sometimes a little something to soothe the soul and tempt the taste buds is not a bad thing.
Intro Bliss Balls (it says it all in the name really)
CHOCOLATE PROTEIN BLISS BALLS
Ingredients: (Makes approx. 30 balls)
1 ½ Cups Medjool dates (the scrummy soft ones)
½ Cup sultanas
1 Cup ground almond meal
1 Cup walnut pieces
4 Tablespoons coconut oil, melted
8 Scoops Protein Powder (I use nuZest Vanilla)
2 Tablespoons raw cacao powder
2 Tablespoons maple syrup (make sure it’s 100% maple syrup and not that ‘maple’ flavoured syrup nonsense
¼ Cup pumpkin seeds
¼ Cup sunflower seeds
¼ Cup chia seeds
½ Cup cacao nibs
Water to blend – I use about ¼ Cup but add slowly to see how it is binding, you don’t want a sloppy mess!
5 Tablespoons dried Coconut to roll the balls in – if you don’t like coconut, you could roll them in raw cacao powder
DIRECTIONS
Place dates, sultanas, almond meal and walnuts in your food processor fitted with an ‘S’ blade and blitz to a crumb like consistency. Dribble in the coconut oil and blitz for another minute. Add the remaining ingredients (except your coconut for rolling) and blitz again till it’s all stuck together. It will be a wee bit sticky so wet your hands with cold water prior to rolling in to balls and coating in the coconut (or cacao powder) then refrigerate to firm up.
