Carrot and Beetroot Slaw


Even though I do actually know that material things will not fundamentally change my life I catch myself subconsciously continually searching for certain items that will just make things that much…  better; the perfect lipstick, the perfect white shirt, the perfect pair of jeans and the perfect foundation. Suffice to say I haven’t found these things yet and so I guess I’ll keep looking.  I do rather feel that I found what could be the ideal slaw recipe.  My hubby bear doesn’t eat cabbage (he’s fussier than the baby bear!) so this version celebrates beetroot and carrots in a vibrant dish that’s great on the plate and in the tummy, but not so good on the shirt if you’ve been lucky enough to find the perfect one.


2 small beetroot, peeled

2 medium sized carrots, peeled

Large handful flat leafed parsley

¼ Cup chopped walnuts

Heaped tablespoon of aioli (recipe in archive)


Finely grate the beetroot and carrots (I do mine in the food processor with the grater attachment).  Finely chop the parsley.  Add everything together in a bowl and mix well to combine.  Yep, it’s that easy!  Perfect, aye?  😉
